Gordon Ramsay Shortcrust Pastry problems?
His recipe is 250g flour, 1 egg, pinch of salt, 125g unsalted butter and 90g caster sugar.
I dont have a food processor so I made it the tradiional way, then wrapped it up to rest for 30mins in the fridge.
When I came to roll it it came apart far too easily. I started again from scratch and the same thing happened.
I'm totally f***** off with it as I've wasted two hours and will have to wait until tomorrow!
What went wrong? I've made pasty before but usually with icing sugar not caster sugar. Do you think this was the problem?
I'll be switching back to my tried an trusted Marco Pierre White pastry method which has worked well in the past. F*** you Gordon!!
It did mention adding water, but only if dry. It didnt seem that dry to me but I think water may have helped to disolve the sugar granules.
I was using Golden Caster sugar which wasnt particulalry fine.
To be honest with you, many celebrity recipes are flawed by typos etc. The 'wet ingredients' ratio might be out and with that amount of flour I would have expect to see 2 eggs (in my bullet-proof recipe at least that asks for the same flour/same sugar). Like the person above suggests, you might be able to rescue it with a few drops of cold water.
I'm surprised that you had a recipe that worked and abandoned it to try yet another.
Your caster sugar should be fine enough.
